Easiest Chicken Sandwich Ever

I am all about fast and easy meals--especially when I'm home alone. Something about Dalin being gone from the apartment just sucks the motivation to try right out of me. I try sometimes, but usually not for myself. So this chicken sandwich is perfect because it is freaking delicious and takes about two minutes to make. 

What you need:

sandwich bread (preferably Dunford's--best bread ever--which they sell at Macey's if you live out west!)
1 tomato
spinach or lettuce
cheese (I like pepper-jack or provolone)
salt and pepper/ lemon pepper
1 can chicken breast
a few spoonfuls of mayo (to mash into the chicken with a fork)

I bet you can see where this is going. If not, here are some pictures to help you. 


It makes a crazy (easy) delicious sandwich and is perfect for those of you who are as lazy as I am when it comes to making dinner for yourself. I made two sandwiches because I had enough so I guess Dalin can have a late-night snack when he gets home from work at 11pm! (Or, at least I'll have a decent lunch at work tomorrow).

Excuses, Excuses

Well, I haven't posted in over a week and I feel kind of bad about it. Mostly because I was doing so well up until the Thanksgiving break.

Let me just give you a brief synopsis of why I am lacking in my blogging:

Número Uno, I have SO many papers to write!
I have to write:
  • A ten-page analysis of James Joyce's "The Dead"
  • A five-page theoretical analysis of a work I have not even read yet
  • A four-page essay on a specific section of the Doctrine and Covenants and its history (I chose section 49--revelation for the Shakers--if you're curious)
  • An essay on "La Dama del Alba" for Español
  • A delivery outline for a final presentation
  • A preparation outline for that very same presentation
#2, I need to study!!!!
I need to study for:
  • My Marriage and Family final exam
  • My D&C final exam
  • My Spanish oral exam
  • My Spanish final written exam
  • My English final on various literary theories (zzzz...)
#3, We are planning to get a new car!
In the next week are so, we are planning to buy or lease (whichever we end up being able to afford) a car with a warranty. We are considering:
  • A Honda Accord
  • A Honda CR-V
  • A Honda Pilot
  • A Toyota Camry
  • A Toyota Rav-4
  • A Hyundai Elantra
So many choices....

#4, Our apartment is an endless pigsty of doom.
I need ought to:
  • Do laundry
  • Put our tornado of clothes away
  • Unpack from Thanksgiving break (or just leave it for Christmas, ha ha not)
  • Pick up our living room which looks like an explosion of school papers, pillows, and jackets/sweatshirts
  • Clear our kitchen table (which has basically been unusable for months because of the mess on it)
  • Clean our bathroom (or beg Dalin to do it for me...)
  • Get rid of the tons of extra crap that we have...seriously, why do we have so much stuff
  • Simplify. This goes with the last point, but it needs re-emphasis.

It looks like I will need to do some mighty praying to accomplish all of these things. 
I'm also recovering from the most obnoxious cough which began (unfortunately) the day that we left for Boise for Thanksgiving break. I promise I will blog about our wonderful holiday as soon as possible. For now, wish me luck!

Homemade Hummingbird Feeder, How To Make One!

It's easy! Seriously, if I can do it, anyone can.

And I had all of the materials at home which was sweet because I hate going out to buy just one thing for a project.

You will need: 

An old-fashioned soda bottle with a screw on cap (preferably glass, though plastic is acceptable)
+
an unused jar lid (perhaps a candle lid like I used)
+
string or twine 
+
sugar & water (& red food coloring if desired)
+
a hot-glue gun
+
hammer & nail or small screw driver

First, punch a hole or two (I did three) in the cap that belongs to the bottle or jar. I hammered a tiny, tiny screwdriver through the cap to make holes.

Next, put hot glue around the edges of the top of the cap--but not all the way--leave a gap or two so that the liquid can escape. Unless the holes are large, the liquid from the bottle will not come out quickly anyway.

Place the cap with glue (still hot) in the center of the inside part of the candle lid. The candle lid will be the tray that catches the liquid for the bird to drink out of. Layer the hot glue around the seal holding down the cap allowing it to dry in-between. Also, make sure you still leave gaps for the liquid to be released from under the cap into the tray.

Once the cap is securely glued to the inside of the candle lid, you are nearly done!

Just mix sugar and water (1/4 amount of sugar to water) and add to the bottle. I heard that red food coloring (as well as honey) is not healthy for hummingbirds, but it is hard to attract them without something red, so I advise raspberry, cranberry, or cherry juice (at the advice of someone else) instead.

With the bottle full, I placed the cap/lid combo back on the bottle, screwing it on tight. *Note, the cap/lid combo is somewhat fragile, so never grab or hold the feeder by the lid (or tray) alone.
All that remains is to hang it. I did not have wire, so I just made a net of strings, tying it in knots around the bottle so it would be held securely. 

Last, I hot-glued a fake red flower to the tray for fun, and then hung it up outside, tying it carefully. I had to shake it a little to get the liquid flowing into the tray. But it works pretty great and it took like twenty minutes to do everything.

Have fun! And enjoy the company of the hummingbirds that will surely come! I was inspired to do this project when I was sitting on my porch next to a bouquet of drying red flowers and a hummingbird came right up next to them to check them out. I thought that it might be nice to feed the little guys.
