So Fresh Salsa


This healthy stuff is so tasty and great for watching a game on TV, General Conference, a family gathering, a game night, a ward activity--you name it. It makes quite a lot so if there are only one or two of you, I might half it unless you want a lot left over! 

4+ Roma tomatoes, diced
2 cans black beans, drained and rinsed in a strainer
1 can white corn 
(Optional) 1 can RoTel diced tomatoes with green chilies
1 small red onion (or half of one), diced small
2-3 garlic cloves, diced finely 
1 yellow bell pepper, diced
1 red bell pepper, diced
1 bunch of cilantro, chopped 
3 limes, squeezed for juice 
2 Tbsp olive oil 

(Seasonings to taste--at least a tsp of each)
Ground cumin
Chili powder
Oregano 
Garlic salt

Enjoy with chips or just eat it straight out of the bowl!! It's delicious and healthy! We are it the second day with sour cream and hamburger in tortillas--yum!
